You may like to make your own homemade Milk Kefir or you can purchase it from your local Health Food Shop or Fresh Fruit, Vegetable and Nut Store. If making your own Milk Kefir, please allow 24 hours for this process to complete, before using it in your Chia Pudding. Here is a pic of Milk Kefir Grains (white). This is an example of how I use the Milk Kefir in my Mango smoothie, as seen on the left and in my Raspberry Chia Pudding, as seen on the right.
If you are in the routine of making your own Milk Kefir daily, sometimes you can end up with excess Milk Kefir if it hasn't been used in a smoothie, for example.
Chia Puddings are a great way to use up excess Milk Kefir, by turning it into a delicious snack/treat that is good for you!
THIS Chia Pudding is packed full of health benefits, like protein (amino acids), magnesium, iron, vitamin C, zinc and anti-oxidants while also supporting good GUT health (immune system). It does contain a lot of Rice Malt Syrup - so its certainly a 'sometimes' food. BUT.....Who knew something that tastes so delicious could be so good for you?
Add Milk Kefir, Peanut butter, Cacao Powder, Rice Malt Syrup and Cardamom to a Nutri-bullet, blender or hand-held blender.
Blend until all ingredients are mixed together.
Add Chia Seeds to the liquid mixture, stirring vigorously.
Making sure the Chia Seeds are well distributed throughout the liquid mixture (not sitting on the bottom) pour the mixtue into 4 small ramekin dishes/glasses/mini jelly cups (BPA Free).
Sit in the fridge to set - up to 4-8 hours. The mixture will be like a 'mousse' consistency.
Eat as is or top with Cacao Nibbs (we get the Certified Organic Fair Trade Cacao Crunch from The Nut House in Ulverstone, Tasmania) and Crushed Peanuts! So yum!!
